Although I absolutely love cooking, sometimes it's nice to just get it over and done with quickly. Especially when you're in a hurry. This meal is definately quick and easy, including only having to wash 1 pan.
I'm not one for measuring things. I happened to have 4 tomatoes with some bad spots, which is fine - just cut it out. If you have 2 large ones it would work too. If you happen to have a can of peeled tomatoes lying about, use that- Though I really do prefer to use 'fresh' stuff.
- about 250 grams of minced beef
- 2 zucchini
- sort of 4 tomatoes
- 1 onion
- 3 cloves of garlic (depending on taste)
- dried oregano
Speedy cooking; chop up the onions and garlic first, and chuck them in a frying pan. Quickly roll your mince and just add them to the pan as you're going along. Give the meat a little bit of time to sear. Next up are the tomatoes, which need to be cut quite small for this recipe. Then chop your zucchini into little blocks and toss them in. Add a lot of oregano, leave for 2 or 3 minutes, and you're done!
If you're in a hurry, it doesn't really hurt to just leave out the onion. Don't substitute with garlic powder though, that's a real shame!
Fast food isn't usually good for your wallet.. How about paleo-fast food?
- mince, 1.25 cents
- 2 zucchini, ~80 cents
- 4 tomatoes, ~30 cents
- onion, ~10 cents
- garlic, ~5 cents
So that's 2 very generous portions for 2 euro and 50 cents.
