Tomatoes Stuffed With Tuna

As you might have guessed, I like stuffing things. It just makes for nice presentation. What I also like are meals you can take to work/school for lunch. This recipe qualifies.

Ingredients;
- 3 tomatoes
- 1 can of tuna
- 1 small onion
- 1/4 bell pepper
- some dried basil

Start by cleaning out the tomatoes, just slice off the top and scoop the insides into a bowl. Cut up the onion and the bell pepper into really small bits. Add the bits to the tomato insides along with the tuna. Toss in bit of dried basil and stir it together.

Now that your tuna is done, stuff it into the cleaned out tomatoes. Either add something green on top for decoration if you plan to serve it, or wrap it in some foil to take with you. Carefull not to squash them in your bag though.

Budget friendly?
- 3 tomatoes, ~50 cents
- 1 small onion, ~10 cents
- tuna can, 69 cents
- pepper, ~50 cents

Ofcourse vegetable prices depend on when and where you buy them.. Do some good hunting and you've got yourself a lovely lunch for just 1.80 euro's. Unless you're a really big eater ofcourse, then you might require some more to fill you up.
Broccoli goes really well with it, but I suppose you might have to be a little weirdo like me to eat it raw and also actually like it. If you're not that odd you might like some celery sticks to go with it, though that ranks quite high on my 'disgusting foods' list :P
