Zucchini summer soup

This blog has been way too recipe deprived, so here is a recipe for a simple paleo and summer proof soup. It's a light soup and works wonders before a nice roast with salad or something like that. (Damn blogging always gives me cravings.)

Ingredients;
- 1 medium onion
- 2 or 3 ripe tomatoes
- 1 carrot
- 2 small zucchini*
- any kind of broth
- oregano or mint

Chop your zucchini into a medium size, and dice the other veggies a bit smaller.
Start by frying the onion in a bit of coconut oil. Add the tomatoes next. When your tomatoes are starting to go mushy add the carrot. Wait another minute and add the squash.
After one more minute it's time to add your broth and either oregano or mint, whichever you feel like. Let it cook for 10 minutes or so. You could add a little splash of lemon juice before serving.

*For this soup I prefer to use the small light green variety of zucchini, because it is softer and sweeter and just plain better. I know the name for it in dutch and in turkish, but not in english- if anyone feels like sharing, please do so in the comments! Many thanks in advance ;)

Just wanted to say how much I appreciate your site. Love the recipes. So many other paleo sites have thirty odd ingredients in their recipes. Doesn't have to be that complicated.

Anyhow, keep up the good job.

Orie, it really does work with everything.. Don't remember what I used in the photo, but I've used chicken, turkey and beef broth before- even at some point when I had nothing in the house used some of those little blocks (no clue what to call them in english) with water, yknow what I mean?
Preference goes to a home-made light chicken broth, no pieces of meat :)

I just made this the other day and it's fantastic! I used veggie broth, and quite a bit of chopped fresh mint. Delish!
