Coconut Paleo Pudding

Normally I'm not a big fan of making paleo-copy food.. if I'm craving something, a fake really isn't going to satisfy me! I also really don't want to advocate using any dietary guidelines as the excuse to just eat whatever and as much you want.. (can't say I don't ever do it though..)
This lovely pudding isn't for either category however. Instead, it's the perfect finish for when you have guests and want to show them "healthy tastes great" or you're having dinner with a loved one and want to do something special. The best bit about it, is that it's very, very satisfying. You really won't feel like having a second helping.

Ingredients (for two);
- 1 egg yolk
- 3 or 4 spoonfull's almond flour
- 1 spoonfull maple syrup
- 1 small can coconutmilk

Start with combining the first 3 ingredients until you get a mixture like in the topleft photo. (At this point it won't look very tasty.) Heat it up in a small pan, medium heat. Stir it for a minute, and then add the coconutmilk. Turn the heat higher, let it go to a boil. Keep stirring to get all the lumps out. Once you're fairly certain you've tackled them all, turn down the heat and serve promptly. You really want to eat this while it's hot! :)

For a nice finishing touch, serve it with some berries. I chose cherries simply because they were around, but taste-wise i'm going to go for raspberries next time. Don't take my word for it though, as I would eat raspberries with everything. Anytime, anywhere.

I'm considering trying it with some vanilla next time, curious what that would do to the taste. Or perhaps lot's of cinnamon?

This was a very delicious dessert.
Never had anything quite like it, an extraordinary taste and like you said some berries with it complements the whole thing.

I would personally never go for cinnamon since I find the taste too overwhelming and it doesn't add to the flavor of this dessert. Instead try vanilla like you said, or maybe go for something else like mild honey.

I just made this and it was wonderful. My wife enjoyed it even after I told her what it was! I added blueberries and raspberries for a great finish.

I have to thank you for this recipe. It makes a great dessert. I tweaked it for breakfast using two whole eggs and 1/4 cup of coconut milk. I've even had success using coconut flour instead of almond meal (switch it up sometimes). It keeps me satisfied as well as keeps my BG numbers low. It's a nice change from scrambled eggs - for me anyway.

What's the number of fluid ounces on a small can of coconut milk? I only ever see them in the 14oz size.
