Eggs with Curry

Today was one of those days I really couldn't be bothered with cooking. So many deadlines to meet and things on my mind that I didn't really want to take time to eat, but couldn't think straight because of hungry-ness either. Eggs are the perfect quick fix.

This particular version of an omelet is especially usefull, and I often make it when I couldn't get out of bed and need something quick to eat before trying to catch my train. Pair it up with something easy to grab and edible while walking, driving or cycling. I actually take it with me as you see in the picture. That's why you can sometimes find forks in my coat pocket.

And ofcourse it's oh so very simple; Just throw 2 eggs in a small frying pan. I like to break the yolks. While waiting for it to get done you make your pick from your pantry for stuff to go with it. Flip it over and sprinkle it with curry powder.

Yea, that's actually it. I'm still so happy with this though, as it's the only real easy egg I like without adding salt. I've even put curry powder in a salt shaker because of this omelet.

I often make a coconut (milk) curry sauce for dinner and cook some fish or shrimp or something in it. I save some of it for the next day, then put that inside an omelette. Yum.

Curry sauce:

Can of coconut milk
onion
red/yellow pepper
basil
1 tblsp. curry paste
tumeric
garlic
coconut oil

Cook the curry paste and tumeric in the coconut oil for a couple of minutes. Then add the onion and pepper (and maybe other vegies: yam, zucchini, whatever). Cook the vegies until soft, then add the can (full fat) of coconut milk. After a while add the basil (and mint?).

I let this cook for at least 30 min. to one hour. Then I put the fish right into the sauce to cook, which only takes 10-15 minutes or so.

I will also sometimes put in a half of a spaghetti squash, just to add some bulk.

And if it's going to be a lot, I reserve some of it for the next day and have it on eggs, or mixed with a can of water-packed tuna.

I Like to cook some recipes where i can add some eggs, because they are very nutritive and delicous.I like to cook eggs specially for the breakfast combine it with bacon. Simply delectable.
