Basil Spinach

Today I spoiled myself. Two of my most favorite foods, salmon and this lovely basil flavored side dish a friend taught me to make.







Ingredients(for 1);
- 2 tomatoes
- 1 onion
- 4 handfulls of spinach
- all the fresh basil you can get

Start by cutting up the onions in large chunks. Put them in a frying pan with some coconut oil, do they call it glazing? I think so. Well, next add your tomatoes, cut into bite sized chunks. I like making them a bit smaller so you can have a piece with every spoonfull. Give them a minute to soften up a bit and then quickly add your spinach. I used lovely big leaved organic spinach today, didn't bother washing it. You can just rip it to shreds while the tomatoes are getting done, drop them right in the pan.

At first it'll look like a lot of greens, but as you can see in these photo's, the spinach shrinks. So make sure you put in plenty. Right after the spinach is all shredded and in the pan, start adding the basil. Simply toss in the whole leaves, maybe half them when they're Really big. Give it all a minute or 2 to soften up and shrink, and you're done!

Variation tips;
My mate Roel who taught this to me used to add slices of beef right after the onion, which is lovely too. Or have it next to a nice piece of beef. Yumm.
If you can't find/afford any fresh basil, you can always make it with dried and then add some garlic for extra flavor. Not nearly as mouth watering, but still good when you've got some spinach and tomatoes left over.
